I´ve read that you need to limit the amount of CSS, and that it has to be inline? The sig I´ve created isn´t that fancy, but it does have a background image, which Outlook doesn´t like, or recognise.

Its email - I wouldn't. Most security conscious people have images and html turned off in their email client anyway. If I had something that needed to be shown, I'd include a link.
